Curanto is a collaborative effort, everyone brings something to add and everyone helps prepare it all.
That day I had to clean muscles with my girlfriend, an old man was walking around sharing mint liquor.
It really is a collaborative thing, besides making the food Curanto is made in a hole on the ground, need to dig it first.
You cover the walls of the hole with very hot stones, that's how everything gets cooked, steam.
You have to add the ingredients and separate them with branches of a very aromatic local brush.
It's sort of like a dungeon, floor by floor you build it to the surface and then cover it all again with branches and cloth.
It takes many hours to be ready but the result is certainly the best food I've ever had.
There are so many vegetables, muscles, pork, potatoes and many other things, everything is so tender and flavourful.
Curanto is an activity, you need a lot of people to make it and a lot more to really enjoy it.
